How do you view the odometer to see the total mileage the car has done? Can’t seem to find it anywhere.

It displays when you turn off the ignition and leave the car. You can also see it in the Data section in the MMI or in the Volkswagen App

Found it now. I was thrown by it being called 'Total distance'!
